I found this recipe recently and really enjoyed it. Even though my husband doesn't really like broccoli the sauce made it good enough for him to eat. It's super simple, done in 20 minutes, which I love. :)
what you need:
8 oz of pasta (I love linguine or fettucine, but you can pick whatever you and your family like)
1 cup fresh or frozen broccoli flowerets
2 tbsp butter
1 lb boneless chicken breast, cubed ~ if you cut it while they're a little bit frozen it's much easier.
1 can cream of mushroom soup (cream of chicken works well too)
1/2 cup milk
1/2 cup grated parmesan
salt and pepper to taste
Here's what you do:
Cook the pasta according to the package ~ it will take longer than the dinner so make sure you get the water boiling first thing so they'll come out at the same time.
Add the broccoli the last 4 minutes of boiling the pasta.
Heat the butter in a skillet (if you've got
Emeril pots and pans even better) and add chicken. Cook until browned, make sure you stir it frequently.
Add soup, milk, cheese, and salt and pepper.
Drain your pasta and broccoli and add them as well.
Heat through and serve with a little more parm.
If you've got some nice crunchy bread and a salad you've got a full meal!
